Birthday Granita

Makes 3 cups, serve 2-4 people
1 cup sugar
1 ½ cup water
2 Tablespoons clear vanilla extract
⅛ teaspoon salt
Sprinkles, duh
In a heavy bottom, medium size saucepan, on medium heat, bring the sugar and water to a boil whisking intermittently to dissolve the sugar fully. Remove from the heat and whisk in the clear vanilla extract and salt to combine.
Pour the mixture into a medium bowl and clear out a place for it in the freezer where it can hang out for awhile without being disturbed. Freeze the mixture for 3-4 hours or overnight. Once a seemingly solid mass, grab two dinner forks or a sturdy whisk and break up into small pieces, agitating and aerating until the frozen mixture is a stretchy, almost sorbet-like state, 1-2 minutes.
Scoop into small cups, sprinkle with SPRINKLES, gobble it all up in celebration.
I don’t know where (or frankly, HOW🤣) I went wrong here, but my granita is not really freezing… it’s more of a jelly than ice-y situation…🙃 any suggestions?
