Super Chocolate Cookies

Makes 12-18


2 sticks butter

1/3 cup chocolate chips


1 1/2 cups sugar

1/4 cup honey


1 egg

1/4 teaspoon vanilla extract


1 1/4 cups flour

3/4 cup cocoa powder

1 3/4 teaspoons kosher salt

3/4 teaspoon baking powder

1/4 teaspoon baking soda


+Extra chocolate chunks, bits, pieces to your hearts desire


Heat the oven to 350°F. Line or grease two half sheet pans.

In the microwave, in a large, heatproof bowl, melt the butter and chocolate chips together, working in 30-second spurts, stirring between blasts, until the mixture is smooth, about 2 minutes. 

Add the sugar and honey, and mix until everything is combined. Then stir in the egg and vanilla until combined

Add flour, cocoa powder, salt, baking powder and soda. Toss together only the dry ingredients on top with the spatula first, before truly stirring them into the wet ingredients below. Mix just until everything is combined. Stir in any additional chocolate you see fit.

Scoop dough (I like ~1/3 cup size) and place 2–3 inches apart on prepared sheets. Bake at 350°F for 8–10 minutes. These cookies will puff, crackle, and spread. It’s kind of impossible to gauge when a cookie this chocolatey is done, so bake a tester cookie to nail your preferred bake time and USE A TIMER (a note to my carefree self more than you:))
