Strawberry Jam

RECIPE:
1 lb strawberries, fresh or frozen
⅔ cup sugar
1 tablespoon lemon juice
Combine strawberries, sugar and lemon juice in a medium pot. Stir until berries are completely coated in sugar. Stir and smash the berries to release some of their juices, if needed. Bring to a simmer over medium-high, then reduce to medium and simmer, uncovered, for 10-12 minutes. The mixture will foam quite a bit at first, but will subside the longer it simmers, once the foam dissipates , the jam will thicken.
Turn the temp up to a medium high and stirring nonstop for 2 more minutes, giving the jam one last dose of high heat. You may get to the point where it feels like your scraping the bottom and sides of the pot- as the mixture thickens, but never burns. Remove from heat and cool completely before using or storing.
