Pineapple Upside Down Cake Cookie

Makes 8 large cookies
1 stick butter, melted
1 egg
1 box yellow cake mix
+Confectioner’s sugar
1 can Pineapple rings
+Maraschino cherries
Heat oven to 350F and line a baking sheet.
In a large bowl, stir melted butter, egg and yellow cake mix together until smooth. Scatter confectioner’s sugar across the baking sheet. Place pineapple rings down 2 to 3 inches apart from one another. Scoop yellow cake cookie dough on top. Bake for 10-12 minutes or until the cookies puff and you can see the caramelization from the pineapples and confectioner’s sugar ooze out the bottom of the cookies. Cool completely before flipping and garnishing with a maraschino cherry.
These were absolutely divine. I made mine smaller to have more to share. 🍍
These were a real letdown for me as I love pineapple upside down cake. 10-12min bake time was not nearly enough, I ended up going 20 min and still didn't get the level of browning in the photos. Texture and flavor not very good either. Won't make again.
A cake and a cookie at the same time!!! WOW! AWESOME!
