Frozen Strawberry Shortcake Snack Mix (w/ Green Yogurt)

Makes one epic bag worth of snack

1 cup Greek Yogurt

2 tablespoons oil

1 cup white chocolate 

¼ cup almond or cookie butter 

2 cups corn Chex (or cereal(s))

1 cup graham crackers, broken into pieces

1 cup ritz crackers, broken into pieces

½ cup mini pretzels

2 cups confectioner’s sugar

¼ cup freeze dried strawberry powder

Pinch salt

¼ cup Large pieces Freeze dried strawberries

Prep the yogurt bites. On a lined sheet pan, drop or pipe bite size dollops of Greek yogurt. Freeze until firm.

In a large heat safe bowl, gently melt oil, white chocolate and nut/cookie butter until smooth.

Stir in cereal and other mixing until completely coated.

Transfer to plastic bag along with confectioner’s sugar freeze dried strawberry powder and salt. seal tight and party (toss in the air, dance around like a fool, whatever you’ve got to do) to coat fully in outer strawberry-sugar dust.

Freeze or refrigerate 10-15 minutes to set, then add frozen yogurt drops and larger pieces of freeze dried strawberries. Crush out of the freezer by the handful or bowlful.
