Dirty Soda Cupcakes

Makes 9 cupcakes


For the Cupcake

4 Tablespoons butter, melted

⅔ cup sugar

2 eggs


½ cup vegetable oil

2 teaspoons vanilla extract

⅓ cup milk

Splash lime juice or vinegar


1 ¾ cup flour

1tablespoon + ½ teaspoon baking powder

½ teaspoon salt


For the Dirty Soda

1 can 7.5 oz Coke

1 Tablespoons Coconut Cream, unsweetened

1 lime, juiced (about 2 tablespoons) 

For the Frosting

1 stick butter, softened

2 cups powdered sugar

¼ cup cream of Coconut Cream, unsweetened

Pinch salt

1 lime, zested for the top!



Heat oven to 375 and line a 12-compartment cupcake tin


Make the cupcakes: In a medium bowl, whisk together butter, sugar and eggs until well combined. Whisk in oil and vanilla, milk and vinegar. Measure flour, baking powder and salt on top, then with a whisk mix only the dry ingredients together first before whisking the wet ingredients down below in, as well, stirring until smooth.


Divide batter evenly across the cupcake liners and bake at 375F for 7 minutes then drop the temperature to 350F for 10-12 minutes until the tops brown slightly and they toothpick clean. Cool completely before soaking in dirty soda.


Make the dirty soda: In a bowl, mix soda, coconut cream and lime juice together. Dunk each cupcake in to soak up the flavor!


Make the frosting: In a bowl, mix together all ingredients, whipping until smooth. Divide evenly over cupcakes and serve!

Is "cream of Coconut Cream" required in the Frosting, the same as the "Coconut Cream" required for the Dirty Soda?
