Deep Dish Apple Crunch Cake (coincidentally Vegan)

Makes one 9” springform cake
Cake
2 cups sugar
⅔ cups shortening
2 eggs
2 teaspoons vanilla extract
3 cups ap flour
1 ½ teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
3 cups apples, peeled & dice
Crunch Topping
½ cup shortening, melted
¼ cup sugar
¼ cup flour
¼ teaspoon salt
1 cup walnuts & pecans, chopped
In a large bowl, mix sugar and shortening until sandy. Mix in eggs and vanilla and stir until light and fluffy. Add in all dry ingredients, stirring just until mixture comes together. Fold in apples. Transfer crumbly cake mixture into a well greased 9” cake pan (I love a springform).
Prep the Crunch Topping: in a medium bowl mix melted shortening and sugar together until wet and sandy. Stir in remaining ingredients and mix until clusters form. Scatter evenly across the surface of the cake batter.
Bake at 350F for 40-50 mins until brown and toasty at the edges and a toothpick inserted comes out clean. Cool before removing from pan, slicing & serving.
This looks wonderful to make with fall PNW apples!
If I were to make this with butter instead of shortening, is it one-to-one exchange?
Thank you!
Just look at how AWESOME that is! Way to go Chef Christina!
