Makes one 9x13-inch pan
1 Milk Bar Confetti Cake Mix
1 stick butter, melted
1 egg
8 oz cream cheese, at room temperature
2 eggs
3 cups confectioner’s sugar
Heat oven to 350F and grease a 9x13-inch pan.
In a large bowl, stir cake mix, melted butter and 1 egg together until well combined. Reserve 1 cup of this mixture on the side for the filling and spread the remainder into the pan as the crust
In the same bowl, stir the 1 cup of reserved mixture with cream cheese, 2 eggs and confectioner's sugar, stirring until smooth. Spread batter evenly atop the first layer and bake for 40-45 minutes where the top layer will puff caramelize and start to crackle. The middle of the baked good will still be jiggly when you remove from the oven, hence it “gooey” name. Cool completely (I like to pop mine in the freezer to set entirely before slicing) and serve at room temperature.
Can I use any confetti cake mix? We don’t have Milk Bar in Canada. Thanks. 😊
